Ingredients
- 1 can of chickpeas, rinsed and drained
- 2 tbsp tahini
- 1 tsp fresh oregano
- 1 pint fresh cherry tomatoes (680 g)
- 1 tbsp lemon juice
- 8 sprigs fresh oregano
- 4 garlic cloves, peeled
- 3-4 tbsp Chère Olive chipotle flavored olive oil
- Mediterranean Alcyon salt, to taste
Preparation
- Preheat the oven to 350°F (175°C).
- In an oven-safe dish, mix the cherry tomatoes, garlic, chipotle olive oil, fresh oregano, and Alcyon salt. Bake for 20-30 minutes, until the tomatoes are well roasted.
- In a food processor, add the chickpeas, tahini, lemon juice, and the roasted tomatoes with garlic. Blend until you achieve a creamy consistency.
- Garnish with fresh tomatoes and oregano, and serve with pita chips or fresh pitas.
