Ingredients
- 500 mL (2 cups) fresh Beef tomatoes from Savoura, diced
- 250 mL (1 cup) chopped onion
- 10 mL (2 tsp) minced garlic
- 30 mL (2 tbsp) olive oil
- 500 mL (2 cups) vegetable or chicken broth
- 60 mL (1/4 cup) crème fraîche (optional)
- 10 mL (2 tsp) fresh basil, finely chopped
- Salt, to taste
- Freshly ground black pepper, to taste
- 5 mL (1 tsp) olive oil, for finishing
Preparation
- In a saucepan, heat the olive oil over medium heat. Sauté the onion and garlic for 2 to 3 minutes, until fragrant.
- Add the diced beef tomatoes, and cook for 5 to 7 minutes, until softened.
- Pour in the broth, bring to a gentle boil, then simmer for 15 minutes.
- Blend the soup until smooth.
- Stir in the crème fraîche, if using, and season with salt and pepper.
- Serve hot, finished with a drizzle of olive oil and a few fresh basil leaves.
