Ingredients
For the chili:
1 tbsp (15 ml) olive oil
1 lb (450 g) lean ground beef
1 lb (450 g) spicy Italian sausage meat
1 pack (680 g) SAVOURA Cocktalio tomatoes, diced
1 cup (250 ml) tomato sauce
1/2 cup (125 ml) blonde beer
1/4 cup (60 ml) beef broth
3 tbsp (45 ml) tomato paste
3 tbsp (45 ml) minced garlic
4 tsp (20 ml) sugar
4 tsp (20 ml) chili seasoning
1 tsp (5 ml) cumin
3 half bell peppers (mixed colours), diced
1 onion, chopped
1 can (540 ml) red kidney beans, rinsed and drained
For the toppings (optional, to taste):
Shredded yellow cheddar cheese
Corn chips
Sour cream
Red pepper hot sauce (such as Tabasco)
Fresh chopped cilantro
Chopped green onions
Diced Cocktalio tomatoes
Preparation
- Heat the olive oil in a pan over medium heat. Cook the ground beef and sausage meat for 3 to 4 minutes, breaking the meat apart as it cooks. Remove any excess fat from the pan.
- Transfer the mixture to the slow cooker. Add all the remaining chili ingredients except the kidney beans, then stir well.
- Cover and cook on low for 5 to 6 hours.
- Add the kidney beans, stir, cover again, and cook for another hour on low.
- Serve the chili with your choice of toppings and enjoy!
