Ingredients
- 15 ml (1 tbsp) olive oil
- 125 ml (1/2 cup) chopped dried (French) shallots
- 15 ml (1 tbsp) chopped garlic
- 160 ml (2/3 cup) tomato purée
- 250 ml (1 cup) dry orzo
- 310 ml (1 1/4 cups) chicken broth
- 15 ml (1 tbsp) paprika
- 1.25 ml (1/4 tsp) chili flakes
- Salt to taste
- 125 ml (1/2 cup) grated Parmesan cheese
- 30 ml (2 tbsp) fresh basil, chopped
- 4 SAVOURA | Beefsteak tomatoes
- 2 packages of 12 SAVOURA | Cerizo tomatoes, 150 g each
Preparation
- Preheat the oven to 190 °C (375 °F).
- In a saucepan, heat the oil over medium heat. Cook the shallots and garlic for 1 minute.
- Add the tomato purée, orzo, broth, paprika, and chili flakes. Season with salt. Bring to a boil, then cover and simmer on low-medium heat for 12 to 15 minutes, stirring frequently, until almost all the liquid is absorbed. Stir in the Parmesan and basil. Remove from heat.
- Cut off the tops of the Beefsteak tomatoes. Using a small spoon, gently hollow out the tomatoes, leaving about 0.5 cm (1/4 inch) of flesh around the edge. Slightly cut the base of the tomatoes to stabilize them.
- Stuff the tomatoes with the orzo mixture, then top with half of the cherry tomatoes.
- Place the stuffed tomatoes and the remaining cherry tomatoes on a baking sheet lined with parchment paper.
- Bake in the oven for 18 to 20 minutes.
