Ingrédients
Burger :
- 4 SAVOURA or SAVOURA BIO Beefsteak tomatoes, halved and seeded
- 4 chicken fillets
- 4 slices cheddar cheese
- 8 leaves Boston or romaine lettuce
- 1 red onion, thinly sliced
- Sea salt and freshly ground black pepper
- 2 tablespoons extra virgin olive oil
Creamy ricotta and basil sauce :
- – 1 cup quality ricotta cheese
– 2 tablespoons double cream
– 2 tablespoons fresh lemon juice
– 2 tablespoons extra-virgin olive oil
– 2 cloves garlic, finely chopped
– ¼ cup fresh basil, finely chopped
– Sea salt and freshly ground black pepper
Préparation
Tomatoes
- Cut a one-inch slice off the top and bottom of each tomato and place on a paper towel to drain slightly.
- Carefully remove the seeds from the halved tomatoes and sprinkle lightly with salt and pepper.
Chicken
- Season the chicken fillets on both sides with salt and pepper.
- Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. Add the chicken fillets and cook for 6-7 minutes on each side, until golden brown and cooked through. Add a slice of cheddar cheese to each fillet during the last few minutes of cooking to melt the cheese.
Sauce
- Mix the ricotta, crème fraîche, lemon juice, olive oil, chopped garlic, and basil in a medium bowl. Season generously with salt and pepper to taste.
Assembly
- On each tomato half, place a lettuce leaf, a slice of red onion, a portion of sliced chicken and a spoonful of creamy ricotta and basil sauce.
- Cover each burger with the other tomato half.
- Serve immediately and enjoy with your favourite side dishes.
