Ingredients
- 2 SAVOURA Beefsteak tomatoes
- 1 large onion, thinly sliced
- 1 sheet of puff pastry
- 1 tablespoon Dijon mustard
- 1/2 cup grated Gruyère cheese
- Fresh GOURMA Provence herbs: rosemary, savory, thyme, basil, oregano
- Olive oil
- Fine salt and finishing salt (such as Maldon)
- Freshly ground black pepper
Preparation
- Prepare the tomatoes: Slice the tomatoes and sprinkle with salt. Let them drain on a rack for 30 minutes.
- Prepare the onions: Slice the onion and sauté in a pan with olive oil until tender and golden.
- Prepare the pastry: Preheat the oven to 425°F (220°C). Roll out the puff pastry on a baking sheet lined with parchment paper.
- Assemble the tart: Spread the Dijon mustard over the pastry. Top with caramelized onions, Gruyère cheese, and drained tomatoes. Sprinkle with Provence herbs.
- Bake: Bake for 25-30 minutes until the pastry is golden and crispy.
- Finish: Season with salt and pepper and drizzle with olive oil, if desired. Cut into portions and serve.
Tip: For an extra gourmet touch, serve this tart with a side salad and a light vinaigrette.
